Salads galore
In an effort to eat better I've decided to start eating more veggies and salad which is good because I love those things! I know myself however and for me the trick to salads is to prep them ahead of time so that is exactly what I did. I made myself 3 different salad mixes for each remaining day of the work week. I am hoping by varying the flavors and prepping it ahead of time I will actually eat them and enjoy them. Now that I have prepped them, I feel pretty confident that I will thoroughly enjoy them. Since this is my cooking blog I decided to keep track of the variations so that I can see what turned out well, what needs adjusting and what bears repeating.
All of these will be eaten with Red Wine Vinaigrette on the side. I have always had the habit of dipping my fork in the dressing and then stabbing the salad, I've never been a huge fan of too much dressing on my salads...
So here goes

2 cups Spring mix
2 tablespoon sliced almonds
¼ cup 2% sharp cheddar, shredded
½ cup sliced mushrooms
¼ cup diced cucumber
Day 2
2 cups Spring mix
2 tablespoon sliced almonds
¼ cup goat cheese crumbles
5 figs, diced
7 golden yellow snacking tomatoes
Day 3
2 cups Spring mix
2 tablespoon sliced almonds
¼ cup diced bacon Muenster cheese
1 diced red pepper
