Spiced Banana and Fig Bread
2 cups white flour
1 teaspoon baking soda
1/2 teaspoon salt
4 very ripe bananas, mashed

1 teaspoon vanilla
½ teaspoon ground ginger
½ teaspoon cardamom
1 teaspoon cinnamon
½ cup vegetable oil
2 eggs
1 cup dark brown sugar, packed tightly
1 cup dried figs,
chopped
1. Preheat
the oven to 350 degrees F and grease a 9 x 5 loaf pan.
2. In a
medium bowl, combine the flour, baking soda, and salt.
3. In a small
bowl mix the mashed bananas, vanilla, ginger, cardamom, cinnamon and vegetable
oil
4. In a large
bowl, cream together the eggs and the sugar. Stir in the mashed banana mixture.
Stir in the flour mixture, until combined. Try not to overmix it!
