PJ's Horseradish and Dill potato salad
This is my go to potato salad recipe that we talked about this morning at my Weight Watchers meeting. They asked if I would post it on our meeting page and I thought you might be interested in it too.
If you split it into 8 equal portions, it's only 3 points a serving.
2 pounds red potatoes, cooked and diced
3/4 cup plain Greek yogurt
1 medium red onion, diced
4 eggs, hard boiled
3 tablespoons Dijon or spicy brown mustard
1-3 tablespoons prepared horseradish (depending on your personal tastes of course)
2 tablespoons dried dill (I love dill so I use a lot of it but again, you can change this depending on your own tastes)
salt, pepper, and cayenne to taste
