Lemony Garlicky Chicken

I'm back!

This is a really simple dish that would taste great with rice or pasta. Tonight I served it with scalloped potatoes and green beans and it turned out really good.

2 boneless, skinless chicken breasts
1 1/2 cup hot water
1 tablespoon Better Than Bullion, chicken flavor
4 tablespoons lemon juice
1 tablespoon minced garlic
2 tablespoons olive oil
2 tablespoons lemon  pepper

1. Place the chicken between two pieces of wax paper and pound the chicken with a meat mallet until it's about 1/2" thick, then rub both sides of each breast with the lemon pepper
2. Heat olive oil and garlic in a large frying pan on medium-high heat, once it starts to sizzle add the chicken breast, cook chicken until browned on both sides, about 4 minutes a side.
3. While you are browning the chicken mix the lemon juice, Better Than Bullion and hot water in a measuring cup. Once the chicken is browned add the liquid mixture to the pan and turn the heat down to medium.
4. Simmer the chicken and sauce mixture for about 10 minutes or until the chicken is cooked through.
