Spiced Banana and Fig Bread

2 cups white flour
1 teaspoon baking soda
1/2 teaspoon salt
4 very ripe bananas, mashed
1 teaspoon vanilla
½ teaspoon ground ginger
½ teaspoon cardamom
1 teaspoon cinnamon
½ cup vegetable oil
2 eggs
1 cup dark brown sugar, packed tightly 
1 cup dried figs, chopped

1. Preheat the oven to 350 degrees F and grease a 9 x 5 loaf pan.

2. In a medium bowl, combine the flour, baking soda, and salt.

3. In a small bowl mix the mashed bananas, vanilla, ginger, cardamom, cinnamon and vegetable oil

4. In a large bowl, cream together the eggs and the sugar. Stir in the mashed banana mixture. Stir in the flour mixture, until combined. Try not to overmix it! 

5. Bake until golden brown and a toothpick inserted into the center comes out with just a few crumbs attached, about 55-60 minutes.
