Cajun Inspired Crisp Tender Potatoes


Enough said, am I right? 


3 Medium to Large sized Idaho potatoes, washed 
1/4 teaspoon oregano
1/4 teaspoon thyme
1 teaspoon paprika
1/8 teaspoon black pepper
1/4 teaspoon cumin
1 teaspoon garlic powder
1/2 teaspoon onion powder 
Sea salt and black pepper to taste 
3-4 tablespoons olive oil 

1. Preheat the oven to 450 degrees, line a baking sheet with tin foil (you may need 2 depending on how many potatoes you end up with) 
2. Cut the potatoes into spears or you can do cubes 1", whichever you prefer
3. Put the potatoes, seasonings, and oil into a gallon sized bag and smoosh them around until all of the potatoes are coated with the oil and seasoning mixture. You can also do this in a bowl but I feel like I have better luck getting even coverage when I use the baggies 
4. Place the potatoes on the prepared baking sheet(s) be sure that the potatoes aren't touching each other so they will get nice and crisp! 
5. Bake for 30-40 minutes, turning them once. Cook until the potatoes are nice and tender.
