Chicken Tikka Masala

Chicken Tikka Masala is pretty much one of the best things ever and I needed to make it for myself. I've made it from a pre-made paste before but never from scratch. And this was a total win and I will definitely be making it again.

1 cup Greek yogurt
8 tablespoons Chicken Tikka Masala seasoning (I got this at Kings and it's worth every penny) divided
1 tablespoon lemon juice
1 pound of chicken breasts, cubed
2 tablespoons olive oil
6 cloves garlic, minced and divided
2 teaspoons ground cumin
2 teaspoons paprika
1 teaspoon salt
1 15 oz can tomato sauce
1 15 oz can diced tomatoes
1 1/2 cup heavy cream

1. In a large bowl mix the yogurt, 3 tablespoons of the Chicken Tikka Masala seasoning,1 tablespoon lemon juice, 2 tablespoons of the garlic and mix until well blended. Put the mixture into a gallon sized baggie and add the chicken. Smoosh everything together and make sure the chicken is really well coated. Stick in the fridge and let the chicken marinate for at least an hour but longer is always better.

2. In a large frying pan heat the the olive oil on medium heat and add the remaining garlic. Saute for like 2 minutes and then add the chicken and cook until the chicken is done, about 10 minutes.

3. Add tomato sauce, tomatoes, cumin, paprika, salt, heavy cream and remaining Chicken Tikka Masala seasoning mix and make sure you stir it really well so everything is mixed up and welll blended. Simmer for about 20 minutes until the sauce thickens and serve over rice.
