Banana Oat Bread - 5 Pts a slice

I wanted to find a way to use my overripe bananas in a new recipe and I saw some banana oat bread online and thought that would be a great way to use them especially in trying to make a lighter, more WW friendly recipe. It turned out really good!

One call out - the riper the bananas the sweeter they will be and the more banana flavor they add. This bread isn't super sweet but I absolutely love it and I hope you will too!

1 cup lightly packed dark brown sugar
1 cup unsweetened applesauce
3 eggs, lightly beaten
2 cups mashed overripe banana
2 cups flour
1 cup old fashioned oats
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 tablespoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon cardamom

1. Preheat oven to 350 degrees and spray 2 loaf pans with cooking spray

2. In a medium bowl, whisk together all of the dry ingredients (from flour to the bottom of the ingredient list) until they are all mixed together. In a large bowl, mix the sugar into the brown sugar until incorporated. Add the eggs and banana until well blended. Fold in the dry ingredients and stir just until mixed. Do not overmix as this will make the bread denser and chewier

3. Pour into the 2 prepared pans and bake for approximately 60 minutes or until a toothpick inserted into the middle comes out dry.


I am going to make a variation of this today with pumpkin instead of bananas and I have high hopes it will turn out just as good. This bread would be great with dried fruit (like dried apricots!) or chocolate chips and at 5 pts a slice instead of 8 or 9 points a slice, I am very happy with my final results!
