Chicken Green Chili

Tonight's successful cooking experiment was Chicken Green Chili and it was delicious.

2 boneless skinless chicken breasts, cut into bite sized pieces
2 small white onions, diced
1 tablespoon olive oil
3 cloves garlic, minced
1 1/2 teaspoons cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1/4 teaspoon cayenne pepper
1 teaspoon chili powder
1 can fire roasted diced tomatoes
1 can diced tomatoes
2 cans diced green chilies
1 cup of water
1 teaspoon of chicken flavored Better Than Bullion
2 cans cannellini beans

1. Heat oil in a large stock pot over medium heat, add the garlic and onions and saute until onions are tender, add chicken and brown chicken
2. Add the cumin, garlic powder, onion powder, cayenne and chili powder to the pan and stir to combine
3. Add tomatoes, green chilies, water, bullion, and beans to the pan. Bring to a boil and then turn the heat down to medium. Simmer for 20-25 minutes or until chicken is thoroughly cooked

I served it over rice and with a sprinkle of cheese on top. NOMS.
