Taco Pasta aka not your mama's Hamburger Helper

Tonight's experiment was a homemade cheesy taco pasta and it was pretty damned good. Way better tasting and I'd bet much better for you than Hamburger Helper. It didn't even take that long to cook. This is definitely going on the to make again list. You could also sub ground turkey and I'd bet that would be pretty tasty too.

1 lb ground beef, 93% lean
1 tablespoon homemade taco seasoning 
8 oz pasta  - I used large shells
1 1/2 cup salsa - I used Sadie's Not So Hot salsa but a chunkier salsa would be good too
1/2 cup water
1/4 cup fat free Greek yogurt - you could also use sour cream but I had the yogurt on hand
1/4 cup shredded 2% sharp cheddar
1/4 cup shredded Mexican blend cheese
2 wedges Laughing Cow Queso Fresco and Chipolte cheese

1. Cook pasta according to the instructions on the package
2. While the pasta is cooking, brown the beef in a large frying/saute pan. Break up the beef as it cooks and then drain thoroughly once cooked through.  Add the taco seasoning, water and salsa to pan, simmer until for 5-10 minutes or until the pasta is finished cooking
3. While the beef is simmering mix the yogurt and cheeses is a bowl, set aside
4. Once pasta is done cooking and has been drained add it to the beef mixture and stir, then add the cheese mixture until the Laughing Cow wedges are melted, and DONE!
