Super Easy Crockpot Pork Roast

King Soopers had Pork Sirloin Roasts on sale for $1.99 a pound this past weekend and all of a sudden I was struck with a craving for one of those super tender pork roasts with carrots and mashed potatoes.

So guess what we had for dinner tonight? And it got 9 1/2 NOMS from Mark so you know it was good! And so easy, it's defnitely going on the "to make again" list! You can always get a bigger roast and just increase all of your spices and liquids accordingly. I was only feeding 2 people and I still have leftovers!

1 1/2 lb pork sirloin roast (or you can use any kind of pork roast)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon Italian seasoning
1/2 teaspoon red pepper flakes
1/2 teaspoon paprika
1/4 teaspoon crushed rosemary
2 cups beef broth
salt and pepper, to taste
4 cups chopped carrots (I used rainbow carrots)
1 large white onion chopped

1. Grease a 6 qt crock pot with cooking spray
2. Place chopped onions and carrots in the bottom of the crock pot
3. Place the pork roast on top of the carrots and onions.
4. Mix the spices with broth and pour over the roast
5. Cook on low for around 8-9 hours (I put it on before I leave at work around 8 am and we ate around 630 and it was perfect)
6. Take out of crock pot and let rest for about 5 minutes before cutting/shredding

You can use the liquid as it is or do like I did and make gravy, it's all up to your preferences!
